Our family has been using our Fresh Red Chile to enhance almost every meal for as long as I can remember, and using the Fresh Red as a base for our BBQ sauces is no exception. When we are cooking chicken and pork, we make our sauce sweet, and when we are cooking beef or turkey, we use the Fresh Red as a base for a more savory sauce, but both sauces are good on just about every kind of BBQ. We have been working for more than a year with a local BBQ chef to perfect a sweet BBQ sauce and a savory BBQ sauce, and we are finally ready to release the sweet version. This sauce is incredibly thick and rich and RED. Your friends will take one look at your BBQ and wonder where that gorgeous color came from. When they taste your BBQ, they will be equally curious because the taste is like no other. Most BBQ sauce has a tomato base, so our Fresh Chile BBQ is entirely different. We think you will agree it is REDDER and BETTER and we guarantee it.

Steaks ship frozen, uncooked, and with ice packs, may thaw in transit.
When you receive your order you should immediately refrigerate all meat items
We recommend that you eat all meat products within 1 week of arrival for best results
Once items are removed from the plastic, they should be consumed within 48 hours
Maldon or another flaky sea salt (½ tablespoon per pound of meat)
Freshly ground pepper (black pepper or a blend of red, white, and black)
FOR strip STEAKS THAT ARE 1 INCHES THICK
Pat the strip steaks dry with paper towels
Generously season both sides of the steaks.
Heat a cast-iron skillet over high heat for 5 to 6 minutes.
Cook for 2 minutes on each side pressing the strip steaks down gently to help them develop a good sear.
Cook them on each side again for 1 minute, if they are at 110°F, remove them from the pan. If they are below that temperature, continue cooking them for 1 minute on each
Remove the strip steaks from the pan and set them aside to rest for 5 to 10 minutes before serving.


FOR strip STEAKS THAT ARE 1½ INCHES THICK

Preheat the oven to 450°F.
Pat the strip steaks dry with paper towels and generously season both sides of the steaks with salt and pepper.
Heat a cast-iron skillet over high heat for 5 to 6 minutes.
Cook strip steaks in the pan and sear for 2½ to 3 minutes on each side
press the strip steaks down gently to help them develop a good sear, until they are deep brown on both sides.
Take the strip steaks out of the pan and put to rest for 10 minutes on baking sheet
Put the strip steaks in the oven for 8 minutes.
Reduce the temperature to 350°F and cook for another 5 minutes, until the internal temperature registers 125° to 130°F
Remove the strip steak from the oven and rest for 7 to 10 minutes before serving.

**The USDA recommends cooking to a minimum internal temperature of 160°F.
Use a meat thermometer and check temperature in the center of the meat.
Remove thawed product from the refrigerator 30 minutes before cooking.
Let rest for 5 minutes before serving.

How long are steaks good in the freezer?
As long as they are kept at a steady freezing temperature, our steaks/roasts can last from 12/18 months in the freezer. 
What is the difference between Wagyu and Prime?
Wagyu is a particular breed of cattle and often times exhibits greater marbling than that found in USDA Prime beef.
I just placed my order and I’m drooling with anticipation. When will my order arrive?
You will receive an both an email with a confirmation number which confirms that the order has been placed as well as an email confirming that the order has been shipped for each order placed online. The email confirmation typically arrives within 24 hours. The email notifying you that the product has been shipped is sent the moment we ship it out and will provide you with your package tracking number.
I received my Wagyu! Now what… ?

Not digging into your Wagyu right away? Place your vacuum-sealed packages in your freezer upon delivery. Your meat should be good for up to 12 months in your freezer.. although we doubt it will stay there that long!
Have some time? Thaw your beef in the refrigerator for up to 48 hours. This is the best way to thaw, allowing the Wagyu to retain all of its natural juices for exceptional flavor.
Hungry now? Keep you Wagyu in the vacuum-sealed package and submerge in a bowl of cold water for a few hours.
Change of dinner plans? Thawed Wagyu still in the vacuum-sealed package can be safely refrozen as long as they have remained refrigerated and not been thawed for longer than a day.
I’m not used to cooking such expensive and delicate beef. What’s the best way to prepare Wagyu?
