A ribeye on a long bone, cut two inches thick and left whole. Same marbling that makes our ribeye worth cooking, on the full frenched rib — two pounds of American Wagyu that lands on the table looking like the reason everyone came over.

It goes on at medium-high just long enough to set a crust, then you ease the heat back and let the fat do the work. Wagyu finishes faster than lean beef and the marbling is forgiving — this is an easy steak to cook well. Pull it, let it rest, and carve it off the bone at the table.

Good to know

  • How many does one feed? Two pounds on the bone. Plan on two plates.
  • How does it arrive? Frozen, vacuum-sealed, packed with dry ice.
  • Thawing. Move it to the refrigerator a day ahead. Don’t rush it in water.
  • Cooking. Medium-high to build the crust, then ease the heat back so the fat renders instead of flaring. It cooks faster than a lean steak — pull it earlier than you think.
  • Freezer space. One flat pack, about the size of a laptop with a handle.
